Pumpkin PeanutButter Treats ( Vegetarian, Gluten Free)

Im always so excited for fall because it means that it is time for me to make my Pumpkin Peanut Butter Muffins! This recipe is SO easy, SO healthy, and SO delicious. These treats have a lot of protein and hardly any sugar making them the perfect pick me up snack or dessert to help you through your day! I live a very active lifestyle so I was so excited when I came up with this easy recipe that is perfect on the go. I hope you enjoy!

P.S. When I make these I never measure out the ingredients anymore because Ive been so good at eyeballing it and because this recipe is not strict. You can add more peanut butter if you like it creamier or more stevia if you like them sweeter etc. So the measurements I will be listing is just a guideline but can be changed based on preference.

Preheat oven to 350 degrees, In a large bowl mix in all the following ingredients:

  • 1 Cup of Peanut Butter
  • 1 Cup of Pumpkin Puree
  • 1/3 cup of maple syrup (I use sugar free Maple syrup)
  • 1/4 cup stevia
  • 1 tsp Cinnamon
  • 1/2 Cup chocolate chips

Once all mixed together pour ingredients into a muffin tray and put in the oven for 20 mins. Once you take them out of the oven they will be very soft (you will think they are not cooked enough, but they are) Let muffins cool, then place them on a plate. In my opinion These muffins are my favorite when they are cold so I place them right in the fridge once they are cooked, this allows the muffin to harden a bit and makes it easier to eat. However, they are of course still delicious right out of the oven. I hope you enjoy!
